Ingredients for 8 Servings

  • 1 tbsp

    oil

  • 1 small

    onion, chopped

  • 1 inch

    ginger root

  • 1 clove

    garlic, chopped

  • 1 cup (200g / 7oz)

    dry red lentils

  • ½ small

    butternut squash, peeled, deseeded and cubed

  • ⅓ cup (40g / 1½ oz)

    fresh coriander, finely chopped

  • 2 cups (500ml / 1 pint)

    water

  • ¾ cup (185ml / ¼ pint + 4 tbsp)

    coconut milk

  • 2 tbsp

    tomato purée

  • 1 tsp

    curry powder

  • 1 pinch

    cayenne pepper

  • 1 pinch

    ground nutmeg

  • salt and

    pepper to taste

Red Lentil and Coconut Soup

Method

  1. Heat the oil in a large saucepan over a medium heat and gently cook the onion, ginger and garlic until soft and fragrant.
  2. Add the lentils, butternut squash and coriander, stirring to coat everything in the aromatics.
  3. Pour in the water and coconut milk, then stir in the tomato purée. Season with curry powder, cayenne pepper, nutmeg, salt and pepper.
  4. Bring to the boil, then reduce the heat and simmer for around 30 minutes, until the lentils and squash are tender.
  5. Taste, adjust seasoning, and serve warm.

Notes

Red lentils cook quickly and naturally break down, creating a creamy texture without blending. If the soup thickens as it sits, simply stir in a splash of vegetable broth or water before reheating.
