Vegan Burger Recipe

These homemade vegan burgers are hearty, juicy, and packed with rich, savoury flavour, making them perfect for barbecues, weeknight dinners, or meal prep. Made with textured vegetable protein and simple pantry ingredients, they're easy to prepare, high in protein, and delicious served with all your favourite burger toppings.

Ingredients for 8 Servings

  • 250g / 1 cup

    TVP (textured vegetable protein)

  • 250 g

    Vegan Beef stock (or veg stock)

  • 2 Tbsp

    Nutritional Yeast

  • 2 Tbsp

    Mushroom Seasoning (or 2 tsp miso paste)

  • 1 tsp

    Onion Powder

  • 1 tsp

    Garlic Powder

  • 1 tsp

    Smoked Paprika

  • 60ml / 1/4 cup

    Vegan Mayonaise (or a flavourless oil)

  • 1 Tbsp

    Blackstrap Molasses

  • 1 Tbsp

    Soy Sauce (or Tamari )

  • 1 tsp

    Vegan Worcestershire

  • 1 tsp

    browning (optional for color)

  • 2 Tbsp

    Ground Flaxseed

  • 30g / 1/4 cup

    plain Flour

  • 30g - 60g / 1/4 - 1/2 cup

    Breadcrumbs (or Oats)

Method

  1. Rehydrate the TVP in the vegan beef stock (or veg stock) for about 10 minutes.
    While the TVP rehydrates, add everything but the flour and breadcrumbs to a bowl and stir to combine (you can also use clean hands to mix it) to make the marinade mixture.

  2. Once the TVP is rehydrated, add the marinade mixture to the TVP and combine with clean hands or a spoon / spatula. Add in the flour and breadcrumbs, and combine once again.

    A quick note on bread crumbs, I recommend using finer bread crumbs over Panko. Start with 1/4 - 1/2 cup worth and add more as needed.
  3. The mixture should come together easily and form a big meatball. You can make a quick patty and toss it from hand to hand to make sure it won't fall apart.

    You can also make a small burger and fry it up to test out the seasoning if you wish, and then adjust as needed after tasting.
  4. Form the burger patties to preferred size, I recommend 2 oz. for a thin smash style patty. 4 oz. for a normal sized patty.

    To cook, simply get a pan up to medium heat, add some oil and cook on each side for about 3-4 minutes or until nicely browned. Season as you like! When you flip the patty, add a slice of vegan cheese, then a little water to the pan. Cover to steam and melt the cheese, and then load up a bun with all the trimmings

Notes

For the best texture, allow the TVP to fully absorb the stock before mixing in the remaining ingredients. If the mixture feels too wet, add a little more breadcrumbs; if it's too dry, add a splash of stock until it holds together easily.

These burgers can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months. Serve in toasted burger buns with your favourite toppings, or enjoy crumbled into wraps, salads, or grain bowls for a delicious high-protein meal.
