I love rice and what better way to jazz it up than by adding some seasonings and vegetables. This easy to make recipe is great to have as part of a meal. Try this as part of a midweek meal and kids usually love this as it is colourful and tasty too. Ingredients ¼ pint or 125 ml coconut milk 3 lbs or 1.35 kg rice ½ lb or 225 g carrots 1 lb or 450 g broad beans 6oz or 175 g vegan margarine 2 small or 1 large green bell pepper 1 medium sized chocho 1 lb or 450 g pumpkin ½ lb or 225 g potatoes 4 scallions or green onions Few sprigs of thyme 4 oz or 110 g tomatoes 1 large bell pepper Salt to taste Preparation • Dice carrots, potatoes, chocho and pumpkin. • Add beans, coconut milk, rice, vegan margarine and all other ingredients then stir. • Cook for 25 minutes. Simmer over low heat for a further 10 minutes or until beans are tender.
