Vegan Banana Bread (low fat)

If you have bananas that have over ripened a bit. This is a great way to use them. This is delicious and VERY easy to make. Can be used for breakfast-on-the-run, if you have a busy schedule and often miss breakfast, then make this in advance and take a slice or two with you to eat on your way in the mornings. This is nice on its own or can be eaten with a nice vegan butter of your choice. INGREDIENTS

1/3 cup of vegan butter ( I use Vitalite or Pure in the UK , in the USA I use Earth Balance) 1/2 cup brown sugar ( turbinardo, raw sugar , florida crystals are good or any good brown sugar is fine ) 1 1/2 cups whole meal flour 1/2 cup unbleached white flour 1 1/2 teaspoons baking powder 1/2 teaspoon bicarbonate soda (baking soda) 2-3 ripe bananas mashed 1/2 cup non dairy milk or non dairy plain yogurt ( soya, coconut, rice or almond milk are all good choices) 1 teaspoon vanilla paste (or vanilla extract) METHOD
  1. Preheat your oven to 350 degrees (180 Fahrenheit )
  2. Place sugar in a bowl

  1. 5. Sift in the flour (The whole meal flour has some pieces in it that may not go through the sieve and that's ok just tip it in to the mixture once all the rest of the flour is sifted)

6. Stir together until combined

  1. 7. sift in the baking powder and bicarbonate soda

12. Stir until all ingredients are combined stir until combined
  1. 13 Place mixture in a great loaf tin

  1. 14 Bake for 50 minutes or until a tooth pick place in the middle comes out clean.
15.Remove from loaf tin and place on a cooling tray Blank 14
  1. 16. Can be eaten plain or with some nice vegan butter of your choice
