Vegan Carrot and Tofu Curry

225g/8oz Carrots
250g/9oz tofu
1 pinch of turmeric powder
1/4 teaspoon chilli or paprika powder –
lemon juice – 1/4 of tea spoon
coriander to garnish
salt to taste

Preparation Method

Grate the carrots , cube the tofu and place in two seperate bowls.
Then heat the pan and add two teaspoon of oil to it. once the oil is hot carefully add the grated carrots to it. fry it for a while and then add the tofu. keep frying for about a minute then add the salt paprika and turmeric powder to it and a small amount of vegetable stock simmer for 5 minutes then add lime juice and coriander to garnish it.

Serve Immediately with Steamed Rice potatoes or Dumplings.
